HELP

Here is the deal, we have quite a few pregnant and new moms in my SS group, some on strict bedrest and several others with illnesses and we are trying to get together a few recipes- mainly casseroles that they can pull out the freezer and use- I have 1 really good Chicken Rotel recipe ( its from my Nana and it is delicious!!!) but i would LOVE to have some other casserole recipes to chose from! I have been searching online but you just never know how good the recipe really is. SOOOO, I was hoping that someone out there who reads this blog might like to share some of their favorites with me!!!!!!! Please, my family could use a few different recipes in the dinner mix as well! ok- just 1 stipulation- I have a crawling/walking 11 month old soo it can't be too difficult or take like 3 hrs!!! THANKS EVERYONE for taking the time to comment and post recipes!!!!! I know they will be a blessing to the homes they go to and the families they minister too!!

I love this one...

3 shredded chicken breasts
1 bag boil in bag rice
small pack broccoli
1 can of cream of chicken soup
Sharp/Cheddar Cheese
Townhouse Crackers
1/2 stick melted butter

Cook chicken and shred - cook rice - Cook soup (mix with milk)

put rice in bottom of 9x11 pan and add soup, broccoli and chicken (you can mix all together if you'd like) spread some shredded sharp cheddar cheese and crumbled crackers on top pur butter over it and bake at 350 for about 20-25 minutes. It's really east even though there are several items... ;-)

You can always so a baked spaghetti... I layer it with cheese/sauce/spaghetti and bake - freezes well too and it's CHEAP!!

Here's a few:

Chicken and Rice
2 c. celery diced and sauted in 4T butter
2 cans creams of chicken soup
3/4 c mayo
1 can sliced water chestnuts(drained)
1 c. toasted almond
Mix together, por into 13x9 pan Bake @350 for 1 hr.

This one is for endless options of casseroles:

southern living casserole

Cimbine 1 c sour cream, 1 cup milk, 1 cup water, salt and pepper with one sauce maker option(see below)(omit sour cream and milk if useing tomatoes)

Stir in veggies, pasta/rice, meat, and extras. Spoon into 13x9 pan and add topping. Bake @ 350 covered for 1 hr 10 min. Uncover and bake 10 min.

Sauce maker options: 1 can cream of mushroom, celery, or chicken soup, 1 can chedder, 2 canns diced tomato(undrained)

Meat options; 2 c chopped cooked chicken, 2 c chopped ham, 2 c. chopped turkey, 1 lb groundbeef(browned and drained), 2 cans tuna9drained)

pasta/rice options: 2c ucooked macaroi, 1 c uncooked rice, 3c uncooked shells

veg. options(10oz. frozen): spincah, brocolli, green beans, english peas, yellow squash, whole kernal corn, mixed veggies

extras: 1 can sliced mushrooms, olives, peppers , onino, celery, cheese

toppings: mozarella, grated parmesean, swiss, cheddar, 2 c bread crumbs or crumbled crackers

Taco Lasagna

1 lb ground beef
1/2 cup chopped green pepper
1/2 c chopped onion
2/3 c water
1 envelope taco seasoning
1 c black beans(drained)
1 can mexican diced tomatoes( i use rotel)
6 flour toritillas
1 can refried beans
3 cups shredded cheese

Cook beef, bellpepper, and onion in skillet. Drain. Add water and taco seasoning. Stir in black beans and tomatoes. Simmer 10 min uncovered.
Place two toritillas in a greased pan. Spread with 1/2 of refried beans 1/2 beef mixture. sprinkle with 1 c cheese. Repeat layers. Top with 2 more tortillas and cheese. Bake 350 for 30 min. covered.


Chicken Pot pie

1/3 c marg.
1.3 c flour
1/2 tsp. salt
1/4 tsp pepper
1.5 c chicken broth
2/3 c milk
2.5-3 c chopped chicked cooked
2 c mixed veggies
2 deep dish pie crusts
dash of cuury
melt margarine on stove. stir in flour, salt anfd pepper. stir in broth and mmilk. cook until thick and bubbly. add curry. add chicken and veggies. spoon to crust put 2nd crust on top and seal. cook 30-40 min. 425 degrees

mmmmm I want to try those recipes! I'll vouch for the pot pie...very good, very easy, and a great one to freeze before baking.
